Happy Earth Day



Hands down, Earth Day is the largest secular event in the world -- and more people join in every year. Men, women and children will haul garbage, clean up coral reefs and mountain trails, show movies, sign petitions, march to solve the climate crises, hold town hall meetings to plan a better future, and rally to save the great apes, dwindling tigers, embattled elephants and other threatened species. More than 100 million schoolchildren around the world will learn about the importance of clean air and water; thousands of federal, state, and local governments will issue reports about their environmental achievements and records and make pledges to improve their environmental performance and invest in green technology; and tens of thousands of clergy members will give sermons about the importance of protecting God's creation.

Every person who does his or her part to fix the problem is also a Face of Climate Change: the entrepreneurs who see opportunity in creating the new green economy, the activists who organize community action and awareness campaigns, the engineers who design the clean technology of the future, the public servants who fight for climate change laws and for mitigation efforts, the ordinary people who commit to living sustainably…

Earth Day Vegetable Stew

Prep Time: 15 minutes    Cook Time: 25 minutes    Total Time: 40 minutes
This delicious stew is flavored with fresh herbs and a touch of honey, and finally with tangy feta cheese.  Many Scramblers tell me this is one of their favorite recipes, and a wonderful way to enjoy the earth’s bounty. Serve the stew over orzo and with Berry Yogurt Pops for dessert.

Ingredients for main dish
  • 1 Tbsp. extra virgin olive oil
  • 1 large yellow onion, chopped
  • 1 large sweet potato, diced into 1/2-inch chunks
  • 28 oz. diced tomatoes, with their liquid, or 7 – 8 fresh tomatoes, diced, with their liquid
  • 16 oz. fresh or frozen cut green beans, trimmed and cut into thirds, if fresh
  • 16 oz. green beans, fresh or frozen, trimmed and cut into thirds, if fresh
  • 1 Tbsp. fresh oregano, or 1/2 tsp. dried oregano
  • 2 Tbsp. fresh parsley, chopped (optional)
  • 20 fresh basil leaves, chopped, or 1 tsp. dried basil
  • 1/2 tsp. salt
  • 1 Tbsp. honey
  • 4 oz. crumbled feta cheese, for serving (optional)
Ingredients for side dish - Orzo (or Israeli Couscous)
  • 12 – 16 oz. orzo or Israeli (large grain) couscous
  • 1 Tbsp. butter or margarine
Ingredients for side dish - Berry Yogurt Pops
  • 1 1/4 cups frozen or fresh raspberries
  • 1 cup low fat strawberry yogurt
  • 1 Tbsp. honey or agave nectar (optional)
(Make the berry pops ahead of time, if you are serving them.)  In a large skillet or stockpot, heat the oil over medium heat.  Add the onions and cook, stirring often, until softened, about 5 minutes.  Add the sweet potatoes and tomatoes and bring it to a low boil.
Reduce the heat, partially cover and simmer the mixture for 10-15 minutes, stirring occasionally.  (Meanwhile, prepare the orzo, if you are making it.)  Add the green beans and herbs and simmer it for 10 more minutes.Stir in the salt and honey.  Serve it immediately, topped with crumbled feta cheese (optional), or refrigerate it for up to 2 days, or freeze it for up to 3 months.  Add the feta when you are ready to serve it.
 
Slow Cooker Directions: Place all ingredients except cheese in the slow cooker, and cook on low for 8-10 hours or high for 4-6 hours. Top with feta cheese when you are ready to serve.

Do Ahead or Delegate: Chop the onion, dice the sweet potato, trim and cut the green beans, if using fresh.

Scramble Flavor Booster: Add extra fresh herbs from your garden.

Tip: It is best to store whole onions in a dark, dry place. Also, make sure to give them some space — they tend to go bad more quickly if they are touching each other.
