This morning Katie woke up wanted to bake, she was all full of energy and wanted to try new recipes. So we decided on 2 different things - Zuccini Oatmeal Muffins and Zuccini Blueberry Cake made with whole wheat flour. I explained to Bella that Katie is on a high fiber diet and because of this many of our baked goods are either made with whole wheat or oatmeal.
Katie got everything on the ingredient list and while Katie and Bella were measuring out all the dry ingredients, I shredded up the zucchini. Katie mixed everything herself by hand and we put the cake in first than we cleaned up and started the second recipe for the muffins. We did notice that the muffins looked dry and not like muffin mixes we have made, Bella said it looked like the batter for dog treats, too funny but it really did. So I told Katie we would add applesauce a little at a time (1/4 cup ) until it looked like muffin batter, 3/4 later it looked great. Katie filled up the muffin pans using an icecream scooper and Bella had to have a taste, she said the batter was delicious. The cake was ready to come out and it made the kitchen smell so good and next was the muffins. By time we were done baking the whole house smelled like apples and cinnamon and it reminded us  of fall time.
Katie and Bella went to watch a Little Einstein Video while I cleaned up the kitchen and got lunch ready. Today for lunch we had leftover lasagna that Katie and Bella help make a few days ago. After lunch we watched a video about families in France, this is part of our homeschooling we are doing. We are making a lapbook/notebook on France and I am using several dvd's on France as part of our hands on learning approach. Bella enjoyed the video and said she was going to have lovely dreams of the Eiffel Tower and all that great food they showed. We also read the book The Cat that walked across France.  After lunch we headed to the Marinette City Park to play on the playground and take a walk through the woods. This park is in the middle of the city but it is mostly covered by tree's and hills, the hills make great sledding hills in the winter. One thing we noticed today was several of the maple trees leaves were changing color, I thought this was pretty early so I don't know why the leaves are turning so quickly. Bella brought home a yellow and red one and she said she wants to take them home with her, so I will make sure we send them with her.
 
We had a great day with Princess Bella and Katie has many more things to show her over the next few weeks.
